  • 1 lb fresh large shrimp, peeled and deveined
  • 4 cups mixed greens (arugula or spinach)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1 cup bell peppers, sliced (assorted colors)
  • 3 tbsp olive oil
  • 2 tbsp lime juice (freshly squeezed)
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Marinate the shrimp by mixing olive oil, minced garlic, lime juice, salt, and pepper in a bowl. Toss in the shrimp until well coated and let marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat (approximately 400°F/200°C).
  3. While the grill heats up, chop mixed greens and slice cherry tomatoes and bell peppers. Cube the avocado last to prevent browning.
  4. Grill the marinated shrimp for about 2-3 minutes on each side until they are pink and opaque.
  5. In a large bowl or platter, layer the greens first followed by cherry tomatoes, bell peppers, avocado slices, and top with grilled shrimp.
  6. Drizzle with reserved marinade or prepare additional dressing if desired. Toss gently before serving.
