Ingredients
Scale
- 1 lb fresh large shrimp, peeled and deveined
- 4 cups mixed greens (arugula or spinach)
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1 cup bell peppers, sliced (assorted colors)
- 3 tbsp olive oil
- 2 tbsp lime juice (freshly squeezed)
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Marinate the shrimp by mixing olive oil, minced garlic, lime juice, salt, and pepper in a bowl. Toss in the shrimp until well coated and let marinate for at least 15 minutes.
- Preheat the grill to medium-high heat (approximately 400°F/200°C).
- While the grill heats up, chop mixed greens and slice cherry tomatoes and bell peppers. Cube the avocado last to prevent browning.
- Grill the marinated shrimp for about 2-3 minutes on each side until they are pink and opaque.
- In a large bowl or platter, layer the greens first followed by cherry tomatoes, bell peppers, avocado slices, and top with grilled shrimp.
- Drizzle with reserved marinade or prepare additional dressing if desired. Toss gently before serving.
