- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large red onion, sliced
- 1 cup cilantro, chopped (divided)
- 2 ripe avocados
- 2 tbsp lime juice (freshly squeezed)
- 3 tbsp olive oil (divided)
- Salt and pepper to taste
Instructions
- 1. Marinate flank steak in lime juice, 2 tbsp olive oil, half of the cilantro, salt, and pepper for at least one hour.
- 2. While marinating, slice the bell peppers and onion. Toss with remaining olive oil and season with salt and pepper.
- 3. Preheat grill to medium-high heat. Grill the steak for 6-8 minutes per side or until desired doneness; grill veggies for about 4 minutes until tender.
- 4. For the dressing, blend avocados with lime juice, remaining cilantro, garlic powder, salt, and pepper until smooth.
- 5. Slice steak against the grain. In bowls, layer rice or quinoa if desired; top with steak slices, grilled veggies, and drizzle with avocado dressing.
