Ingredients
Scale
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 tbsp olive oil
- 3 cloves garlic, minced
- ¼ cup lemon juice
- 2 tsp dried oregano
- 1 cup bell peppers, chopped (mixed colors)
- 1 cup cucumbers, chopped
- ½ cup crumbled feta cheese
- 2 tbsp low-sodium soy sauce
Instructions
- Marinate the chicken: In a bowl, mix olive oil, garlic, lemon juice, oregano, salt, and pepper. Add chicken breasts and coat well. Let marinate for at least 30 minutes.
- Preheat grill or oven: Heat your grill or preheat oven to broil at 400°F (200°C). If using an oven, line a baking sheet with parchment paper.
- Cook chicken: Remove chicken from marinade and grill for about 6-7 minutes per side until cooked through (165°F internal temperature). If baking, place on the prepared sheet and bake until golden brown.
- Prepare veggies: While the chicken cooks, chop bell peppers and cucumbers into bite-sized pieces.
- Make sauce: Mix soy sauce with remaining marinade or create a new dressing using olive oil and lemon juice.
- Assemble bowls: Slice cooked chicken into strips and layer in bowls over rice or quinoa. Top with veggies, drizzle with sauce, add sliced chicken, and finish with feta cheese.
