  • 34 lbs chuck roast
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cups chopped carrots
  • 2 cups chopped potatoes
  • 1 large yellow onion, chopped
  • 2 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  1. Preheat oven to 300°F (150°C). Season the chuck roast with salt and pepper.
  2. In a skillet over medium-high heat, sear the roast for 4-5 minutes on each side until browned. Set aside.
  3. In the same skillet, sauté onions and garlic until soft, about 3 minutes.
  4. In a large roasting pan, return the roast and add carrots, potatoes, and beef broth until just covered.
  5. Sprinkle thyme and rosemary over the top. Cover tightly with a lid or foil.
  6. Cook in the oven for about 3 hours or until fork-tender.
  7. Remove from oven, shred meat in the pan to soak up juices, and serve with mashed potatoes or rolls.
