Instructions

  1. Preheat the oven to 425°F (220°C) and line two baking sheets with parchment paper.
  2. In a medium saucepan, bring water and butter to a gentle boil over medium heat until the butter melts.
  3. Remove from heat and quickly stir in sifted flour and salt until a smooth dough forms.
  4. Allow the mixture to cool slightly before adding eggs one at a time, mixing well after each addition.
  5. Fold in the grated cheese until fully incorporated.
  6. Pipe small mounds onto prepared baking sheets about an inch apart.
  7. Bake for 20-25 minutes or until puffed and golden brown.
