  • 1 lb Yukon Gold potatoes, quartered
  • 1 lb fresh carrots, sliced
  • 1 lb zucchini, sliced into half-moons
  • 5 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
