  • 1 lb baby potatoes, halved

  • Salt and pepper to taste

Instructions

  1. Wash and halve the baby potatoes; set aside.

  3. Heat olive oil in a large skillet over medium-high heat. Sear the steak for 4-5 minutes on each side until browned; remove from skillet and let rest.

  5. Push potatoes to one side; add butter, minced garlic, and herbs to the pan. Stir until fragrant.
  6. Return the steak to the skillet for an additional minute to absorb flavors before serving.
