Instructions

- In a separate bowl, beat egg whites until stiff peaks form. Fold into the batter carefully.
- Heat a nonstick skillet on low and grease lightly. Scoop about ½ cup of batter onto the skillet and cover with a lid.
- Cook until bubbles form (about 4 minutes), then flip and cook for an additional 3 minutes.
