Ingredients

  • 8 oz fresh salmon fillets
  • 4 rice paper wrappers
  • 2 tbsp spicy mayo (1 tbsp mayonnaise mixed with 1 tsp Sriracha)
  • ½ cucumber, cut into thin strips
  • ½ avocado, sliced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp lime juice

Instructions

  1. Cook the salmon fillets in a skillet over medium heat for 4-5 minutes per side until opaque and flaky. Season with salt and pepper.
  2. In a small bowl, mix mayonnaise and Sriracha to create spicy mayo.
  3. Soften each rice paper wrapper in warm water for about five seconds and lay flat.
  4. Place cooked salmon, cucumber, avocado, and drizzle spicy mayo in the center of each wrapper.
  5. Fold sides and roll tightly like a burrito.
  6. Cut each roll in half and serve with soy sauce mixed with lime juice for dipping.
