Ingredients
Scale
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1/4 cup low-sodium soy sauce
- 1/4 cup pineapple juice (fresh or canned)
- 2 tbsp honey
- 1 tsp red pepper flakes (adjust to taste)
- 1 cup fresh pineapple chunks
Instructions
- Preheat your grill or oven to 400°F (200°C). If using an oven, grease a baking dish with cooking spray.
- Season the chicken breasts with salt and pepper. For added flavor, marinate them in soy sauce and minced garlic while preparing other ingredients.
- In a bowl, whisk together soy sauce, pineapple juice, honey, and red pepper flakes until well combined.
- Place the chicken in the prepared dish or directly on the grill. Pour half the sauce over the chicken and reserve the rest. Cook until golden brown and fully cooked—about 20-25 minutes in the oven or 6-7 minutes per side on the grill.
- During the last few minutes of cooking, add fresh pineapple chunks to caramelize slightly.
- Serve with remaining sauce drizzled on top.
