- 1 firm cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, chopped

- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water until clear; combine it with 2 cups of water or vegetable broth in a saucepan. Bring to a boil.
- Reduce heat to low, cover the pot, and simmer for about 15 minutes until all liquid is absorbed. Let sit covered for an additional 5 minutes before fluffing with a fork.
- While quinoa cooks, chop cucumber, halve cherry tomatoes, chop red bell pepper, and slice red onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- In a large bowl, combine cooked quinoa and chopped veggies. Drizzle with dressing and toss gently to coat.
