  • 2 cups shredded Oaxaca cheese
  • 1 cup red chile sauce
  • 1/2 cup chopped fresh onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly toast each tortilla in a skillet over medium heat for about 10-15 seconds per side.
  3. Spread some red chile sauce at the bottom of a baking dish. Fill each warmed tortilla with cheese and onions, roll tightly, and place seam-side down in the dish.
  4. Pour more red chile sauce over the top and sprinkle with additional cheese.
  5. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until bubbly and golden.
