- 3 cups boneless, skinless chicken breasts (about 4 breasts)
- 2 cups fresh leeks, thoroughly washed and sliced
- 4 tbsp butter
- 1/3 cup all-purpose flour
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 sheet puff pastry
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
- In a skillet over medium heat, melt 2 tablespoons of butter. Add seasoned chicken breasts and cook until golden brown on both sides (about 6 minutes per side). Remove from heat and chop into bite-sized pieces.
- In the same skillet, add another 2 tablespoons of butter and the sliced leeks. Sauté until soft (about 5 minutes).
- Sprinkle flour over the leeks and stir for about a minute. Gradually pour in the chicken broth while stirring until thickened. Add heavy cream, thyme, salt, and pepper.
- Return the chopped chicken to the skillet and mix until combined.
- Pour the mixture into the prepared baking dish. Cover with puff pastry, crimp edges to seal, and cut slits on top to release steam.
- Bake for 25-30 minutes or until the pastry is golden brown.
