Instructions
- Boil the eggs in cold water until they reach a rolling boil. Then cover and let sit off heat for 10-12 minutes.
- Once cooled, peel the eggs under running water and chop them into small pieces.
- In a mixing bowl, combine chopped eggs, mayonnaise, Dijon mustard, and half of the paprika. Mix until creamy.
- Stir in chopped green onions and remaining paprika. Adjust seasoning with salt and pepper.
- For added flavor, fold in bacon bits if desired.
