  • 6 large hard-boiled eggs
  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1/4 tsp paprika (plus extra for garnish)
  • 2 green onions, finely chopped
  • Salt and pepper to taste
  • 1/4 cup bacon bits (optional)

Instructions

  1. Boil the eggs in cold water until they reach a rolling boil. Then cover and let sit off heat for 10-12 minutes.
  2. Once cooled, peel the eggs under running water and chop them into small pieces.
  3. In a mixing bowl, combine chopped eggs, mayonnaise, Dijon mustard, and half of the paprika. Mix until creamy.
  4. Stir in chopped green onions and remaining paprika. Adjust seasoning with salt and pepper.
  5. For added flavor, fold in bacon bits if desired.
  6. Serve immediately with chips or veggies or refrigerate for later enjoyment.
