  • ½ cup vegetable oil

  • 1 cup boiling water

Instructions

  3. In another bowl, mix eggs, buttermilk, vegetable oil, and vanilla until smooth.
  4. Pour the wet ingredients into the dry mixture and stir until combined. Gradually add boiling water until the batter is smooth.
  5. Divide the batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let cool for 10 minutes in pans before transferring to wire racks to cool completely.
