  • 1 cup uncooked quinoa
  • 1/2 cup dark chocolate chips
  • 2 tbsp honey or maple syrup
  • 2 tbsp coconut oil (melted)
  • 1/4 tsp sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Rinse quinoa under cold water, then combine it with 2 cups of water in a saucepan. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until fluffy.
  3. In a large bowl, mix the cooked quinoa with dark chocolate chips, honey or maple syrup, melted coconut oil, and sea salt until well combined.
  4. Spread the mixture evenly onto the prepared baking sheet and flatten it down.
  5. Bake for 20-25 minutes until golden brown and crispy. Keep an eye on them to avoid burning.
  6. Allow to cool for 5 minutes before breaking into pieces and transferring to wire racks to cool completely.
