Description

Cucumber Radish Salad is a refreshing and colorful dish that perfectly combines the crispness of cucumbers with the peppery bite of radishes. Ideal for summer picnics or as a vibrant side dish, this salad comes together quickly and showcases fresh flavors that will delight your taste buds. With its crunchy texture and zesty dressing, each bite feels like a burst of summer.

Ingredients

Scale
  • 2 cups English cucumbers, thinly sliced
  • 1 cup radishes, quartered
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash cucumbers and radishes under cold water. Slice cucumbers into thin rounds and cut radishes into quarters.
  2. Thinly slice the red onion; optionally soak in cold water for five minutes to reduce sharpness.
  3. Chop fresh dill finely.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper until well combined.
  5. In a large bowl, combine cucumbers, radishes, onion slices, and dill. Drizzle with dressing and toss gently to coat.
  6. Serve immediately or chill in the fridge for about 15 minutes before serving for enhanced flavor.
