- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 tbsp fresh ginger, minced
- 1 can (14 oz) full-fat coconut milk
- 4 cups low-sodium chicken broth
- ¼ cup low-sodium soy sauce
- 2 tbsp fresh lime juice
- Fresh cilantro for garnish
- Sliced chilies for garnish
Instructions
- Finely chop the garlic and ginger.
- Place the chicken breasts in the bottom of the crockpot. Add garlic, ginger, chicken broth, and coconut milk.
- Drizzle in soy sauce and lime juice; stir gently to combine.
- Cover and cook on low for about 6 hours or until the chicken shreds easily with forks.
