  • 3 lbs chuck roast
  • 4 dried guajillo chiles, stems and seeds removed
  • 2 dried ancho chiles, stems and seeds removed
  • 6 cloves fresh garlic, minced
  • 2 tsp ground cumin
  • 1 tsp dried Mexican oregano
  • 2 bay leaves
  • 4 cups low-sodium beef broth
  • Juice of 2 limes

Instructions

  1. Toast guajillo and ancho chiles in a dry skillet over medium heat until fragrant (about 2 minutes).
  2. In a blender, combine toasted chiles, garlic, cumin, oregano, bay leaves, and beef broth; blend until smooth.
  3. Season the chuck roast with salt and pepper. Sear in oil over medium-high heat until golden brown on all sides.
  4. Place the seared beef in the crockpot and pour the blended sauce over it. Cover and cook on low for 8 hours or high for 4 hours until fork-tender.
  5. Shred the cooked beef with two forks and return it to the broth.
  6. Serve in bowls garnished with chopped onions and cilantro alongside warm tortillas.
