  • 2 cans (10 oz each) chopped clams in juice
  • 4 strips thick-cut bacon, diced
  • 2 medium Yukon Gold potatoes, peeled and diced (about 2 cups)
  • 1 medium sweet onion, diced
  • 1 cup celery, finely diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 4 cups low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, crisp the diced bacon until golden brown. Drain excess fat but keep about 2 tablespoons in the pan.
  2. Add onions, celery, and garlic to the skillet; sauté until onions are translucent (about 5 minutes).
  3. In your crockpot, combine sautéed veggies with potatoes, clams (including juice), chicken broth, salt, and pepper. Stir well.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Stir in heavy cream during the last half hour of cooking.
  6. Serve warm topped with fresh parsley or additional bacon bits.
