  • 2 lbs russet potatoes, thinly sliced
  • 2 cups heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Thinly slice the russet potatoes (about 1/8 inch thick).
  3. In a medium saucepan over medium heat, melt the butter. Add minced garlic and sauté until fragrant (about 1 minute). Stir in heavy cream, onion powder, salt, and pepper.
  4. Layer half of the potato slices in the prepared baking dish. Pour half of the cream mixture over them. Repeat with remaining potatoes and cream mixture.
  5. Generously top with shredded cheddar cheese.
  6. Cover with foil (shiny side down) and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown and bubbly.
  7. Let rest for 10 minutes before serving; garnish with fresh parsley.
