  • 1 cup fresh cranberries (or 1 cup frozen)
  • 2 cups diced Yukon Gold potatoes (about 2 medium potatoes)
  • 1 cup bell peppers, diced (any color)
  • 1 medium yellow onion, chopped
  • 2 tbsp olive oil
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, season chicken with salt, pepper, and minced garlic.
  3. Dice potatoes and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25 minutes until golden brown.
  4. In a skillet over medium heat, sauté onions and bell peppers in oil until soft (about 5 minutes).
  5. Add seasoned chicken to the skillet; cook until browned on both sides (about 10 minutes total).
  6. Stir in cranberries and roasted potatoes.
  7. In a small bowl, mix soy sauce and maple syrup; drizzle over the dish and simmer for an additional couple of minutes.
