Description

  • 1 lb large shrimp (peeled and deveined)
  • 1 cup unsweetened coconut flakes
  • 1/2 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup panko breadcrumbs
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rinse shrimp under cold water and pat dry.
  3. Set up three bowls: one with flour mixed with salt and pepper, another with beaten eggs, and the last with panko breadcrumbs mixed with coconut flakes.
  4. Dredge each shrimp in flour, dip in egg, then coat with the panko-coconut mixture. Place on the baking sheet.
