- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 lb Andouille sausage, sliced
- 1 lb shrimp, peeled and deveined
- 1 cup chopped green bell pepper
- 1 cup chopped yellow bell pepper
- 1 cup finely chopped yellow onion
- 1 cup chopped celery
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp Cajun seasoning
Instructions
- Prepare your ingredients by chopping the onions, bell peppers, and celery.
- In a large pot over medium-high heat, brown the chicken breasts in oil until golden on both sides. Remove and set aside.
- Sauté the chopped onions, bell peppers, and celery in the same pot until softened.
- Add minced garlic and sauté until fragrant. Stir in diced tomatoes and return the chicken to the pot.
- Pour in chicken broth along with any juices from the chicken, then add Cajun seasoning.
- Bring to a simmer for about an hour. Add shrimp during the last few minutes of cooking until they are pink and opaque.
- Serve hot over rice.
