- 2 Cornish Hens (about 1.5 lbs each)
- 1 cup Apple Cider
- 1/4 cup Maple Syrup (Grade A or B)
- 2 tablespoons Dijon Mustard
- 3 cloves Garlic (minced)
- 1 tablespoon Fresh Thyme (chopped)
- 1 tablespoon Fresh Rosemary (chopped)
- Salt and Pepper to taste
Instructions
- 1. Preheat your oven to 400°F (200°C) and spray a roasting pan with nonstick cooking spray.
- 2. Rinse the Cornish hens under cold water, pat dry, and generously season with salt and pepper inside and out.
- 3. In a bowl, whisk together apple cider, maple syrup, Dijon mustard, minced garlic, thyme, and rosemary to create the glaze.
- 4. Place the hens breast-side up in the roasting pan and pour half of the glaze over them.
- 5. Roast in the oven for about 50-60 minutes until the internal temperature reaches 165°F (75°C), basting with remaining glaze halfway through cooking.
