  • 34 boneless, skinless chicken breasts (about 500g), cut into bite-sized pieces
  • 2 cloves fresh garlic, minced
  • 200g udon noodles
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 100g broccoli florets
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp brown sugar

Instructions

  1. Prepare your ingredients by chopping chicken, slicing bell peppers, and cutting broccoli.
  2. Heat a splash of oil in a large skillet over medium-high heat. Add chicken and cook for about 5-7 minutes until golden brown and cooked through.
  3. Add minced garlic and sauté for 30 seconds until fragrant. Then add bell peppers and broccoli; sauté for about 4 minutes until veggies are tender yet vibrant.
  4. Boil water in another pot; cook udon noodles according to package instructions (about 3 minutes). Drain well and toss into the skillet.
  5. Whisk together soy sauce, brown sugar, and sesame oil in a small bowl. Pour over stir fry; mix well and simmer for an additional couple of minutes.
