- 8 oz cremini or button mushrooms, sliced
- 1 cup Marsala wine
- 1 cup low-sodium chicken broth
- 2 tbsp extra virgin olive oil
- 2 tbsp unsalted butter
- Salt and pepper to taste
Instructions
- Flatten the chicken breasts between plastic wrap using a meat mallet for even cooking.
- Season both sides with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-7 minutes per side until golden brown. Remove from skillet.
- In the same skillet, add mushrooms and sauté until browned, about 4-5 minutes. Scrape the bottom of the pan to incorporate flavors.
- Add minced garlic and cook for an additional minute. Pour in the Marsala wine and chicken broth; let simmer for about 5 minutes until reduced by half.
- Return the chicken to the skillet, cover with sauce, and simmer for another 10 minutes to meld flavors.
- Stir in butter before serving, drizzling sauce over the chicken.
