  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyère cheese
  • 3 tbsp unsalted butter (for greasing)
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • ½ cup panko breadcrumbs (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and butter a casserole dish.
  2. Thinly slice the potatoes to about a quarter-inch thickness.
  3. In a bowl, mix heavy cream, minced garlic, salt, and pepper until well combined.
  4. Layer half of the potato slices in the baking dish, pouring some creamy mixture and sprinkling cheese over each layer. Repeat with remaining potatoes and top with extra cheese.
  5. Cover with foil and bake for 45 minutes. Remove foil, sprinkle with panko breadcrumbs mixed with melted butter, and bake uncovered for an additional 15-20 minutes until golden brown.
