- 1 cup sliced carrots
- 1 cup sliced parsnips

- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- ½ cup grated Parmesan cheese
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Thinly slice the potatoes, carrots, parsnips, and onion to about an eighth of an inch thick.
- In the prepared dish, layer half of the vegetables starting with potatoes. Sprinkle garlic between layers.
- Whisk together heavy cream, salt, pepper, and half of each cheese; pour over layered vegetables.
- Repeat layering with remaining vegetables and top with leftover cream mixture. Add the rest of the cheddar and Parmesan on top.
- Cover with foil and bake for 45 minutes; remove foil and bake for an additional 15-20 minutes until golden brown.
