- 2 large eggs (beaten)

- 1 tablespoon toasted sesame oil
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
Instructions
- Prepare your ingredients by ricing the cauliflower and chopping the vegetables.
- In a large skillet or wok, heat olive oil over medium heat and scramble beaten eggs until just set. Remove from the pan.
- In the same skillet, add more oil if needed and sauté garlic for about 30 seconds, then add bell peppers, peas, and carrots. Cook for about 5 minutes until tender yet crisp.
- Stir in riced cauliflower, soy sauce, and sesame oil; cook for an additional 5–7 minutes until well combined.
- Add scrambled eggs back into the skillet and mix thoroughly; taste and adjust seasoning as needed.
