- Cook fettuccine according to package instructions until al dente. Drain and reserve a splash of pasta water.
- Toss shrimp in Cajun seasoning and let sit for 5 minutes.
- In a skillet over medium heat, melt butter or olive oil. Sauté garlic until fragrant (about 1 minute).
- Add seasoned shrimp to the skillet and cook for about 2 minutes per side until pink and opaque.
- Remove shrimp and set aside. Pour heavy cream into the skillet, simmer for 5 minutes until slightly thickened, then stir in Parmesan until melted.
- Combine cooked fettuccine and shrimp in the skillet, tossing well. Add reserved pasta water as needed to achieve desired consistency.
