Ingredients
Scale
- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 2 tablespoons Cajun seasoning
- 12 oz fettuccine pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 2 tablespoons olive oil
Instructions
- Season the chicken breasts generously with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat, then cook the chicken for about 6-7 minutes per side until golden brown and cooked through. Remove from skillet and let it rest before slicing.
- In a pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
- In the same skillet used for the chicken, sauté minced garlic until fragrant. Add heavy cream and chicken broth, stirring continuously. Allow to simmer for about 5 minutes until slightly thickened.
- Stir in Parmesan cheese until melted and creamy. Taste and adjust seasoning as needed.
- Combine sliced chicken with drained pasta in the skillet, tossing gently to coat everything in sauce.
- Serve immediately, garnished with chopped parsley if desired.
