Ingredients

  • 200g spaghetti or bucatini
  • 100g Pecorino Romano cheese, grated
  • 12 tbsp freshly cracked black pepper
  • Salt (for pasta water)

Instructions

  1. Boil salted water in a large pot and cook pasta until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, toast the black pepper for about 1 minute.
  3. Add the hot pasta to the skillet off heat, sprinkle in half the cheese, and toss vigorously.
  4. Gradually add reserved pasta water until desired creaminess is reached. Mix in remaining cheese.
  5. Serve immediately with extra Pecorino Romano and cracked pepper on top.
