Description

  • 2 large Russet Potatoes
  • 3 boneless skinless Chicken Breasts (about 1 lb)
  • ½ cup Buffalo Sauce
  • 1 cup shredded Cheddar Cheese
  • 2 Green Onions, chopped
  • ¼ cup Sour Cream

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and prick the potatoes with a fork. Bake for 45-60 minutes until tender.
  2. In a skillet over medium heat, cook the seasoned chicken breasts for about 6-7 minutes on each side until cooked through. Shred the chicken and mix it with buffalo sauce.
  3. Once cooled, slice the baked potatoes in half lengthwise and scoop out some flesh, leaving enough to hold together.
  4. Fill each potato skin with shredded buffalo chicken, top with cheddar cheese, and bake for an additional 10-15 minutes until golden brown.
  5. Serve hot, drizzled with sour cream and topped with green onions.
