  • 3 cloves fresh garlic, minced
  • 1 cup buffalo sauce
  • 1 cup sliced bell peppers (mixed red and green)
  • 1 cup sliced onions (yellow or sweet)
  • 1 cup provolone or cheddar cheese, shredded
  • 4 sturdy sub rolls
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Prepare your ingredients by slicing bell peppers and onions.
  2. In a skillet over medium heat, heat olive oil and cook chicken breasts seasoned with salt and pepper for about 6 minutes per side until golden brown and cooked through.
  3. Remove chicken; add sliced onions and peppers to the skillet. Sauté until softened (about 5 minutes).
  4. Shred the chicken using forks or chop into bite-sized pieces.
  5. Return chicken to skillet, add buffalo sauce and soy sauce; stir to combine and simmer for 2 minutes.
