- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain and reserve some pasta water.
- In a pan, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1 minute.
- Add fresh spinach to the pan and stir until wilted, approximately 2 minutes.
- Pour in heavy cream and add crumbled blue cheese. Stir continuously for about 3 minutes until combined. Adjust the consistency with reserved pasta water if needed.
- Combine cooked pasta with the sauce in the pan. Toss well to coat.
