- 2 bay leaves

Instructions
- Rinse soaked black-eyed peas under cold water. Chop onion, carrots, celery, and garlic.
- In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add garlic and sauté for another minute.
- Stir in carrots and celery; cook for another 5 minutes.
- Add black-eyed peas and vegetable broth along with thyme, cumin, bay leaves, salt, and pepper. Bring to a boil then reduce heat to simmer.
- Let the soup simmer gently for 30-40 minutes (if using dried peas) or 15-20 minutes (if using canned peas), stirring occasionally.
- Remove from heat, discard bay leaves, and serve hot with crusty bread.
