- 1 cup all-purpose flour
- 1/2 cup granulated sugar (for crust)
- 1/4 cup unsalted butter, cold and cubed
- 2 large eggs
- 1/2 cup granulated sugar (for filling)
- 1/4 cup Meyer lemon juice, freshly squeezed
- Zest of 1 Meyer lemon
- 2 tbsp all-purpose flour (for filling)
- Powdered sugar, for dusting
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine 1 cup flour and 1/2 cup granulated sugar. Cut in the cold butter until crumbly. Press into the bottom of an ungreased baking dish and bake for 15 minutes or until lightly golden.
- In another bowl, whisk together the eggs, 1/2 cup granulated sugar, Meyer lemon juice, zest, and 2 tbsp flour until smooth. Pour over the baked crust.
- Bake for an additional 25-30 minutes or until set. Let cool completely at room temperature.
- Dust with powdered sugar before slicing into squares.
