  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1 cup canned crushed pineapple (drained)
  • 1/2 cup chopped pecans or walnuts (optional)
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a mixing bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, and cinnamon until well combined.
  3. In another bowl, mix oil, eggs, mashed bananas, and crushed pineapple until fully incorporated.
