  • 2 large sweet onions, chopped
  • 4 medium carrots, cut into chunks

  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tsp fresh rosemary (or 1 tsp dried)
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 300°F (150°C).
  2. 2. In a Dutch oven over medium-high heat, add olive oil. Season the chuck roast with salt and pepper and sear each side until browned (about 3-4 minutes per side). Remove roast and set aside.
  3. 3. In the same pot, sauté onions, carrots, celery, and garlic until fragrant (about 2 minutes).
  4. 4. Return the roast to the pot. Pour in the beef broth and add thyme and rosemary. Scrape any browned bits from the bottom of the pot.
  5. 5. Cover with a lid and transfer to the preheated oven. Cook for about 3 hours or until fork-tender.
