Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 3 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup red wine
  • 2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the beef and vegetables.
  2. In a large pot over medium-high heat, heat olive oil and sear the beef cubes until browned on all sides. Remove from pot.
  3. Sauté onions and garlic in the same pot until soft.
  4. Deglaze the pot with red wine, scraping up any brown bits.
  5. Return beef to the pot along with broth, carrots, potatoes, and thyme. Bring to a gentle boil.
  6. Lower heat and cover; simmer for about 2 hours or until beef is fork-tender.
