Beef and Turkey Meatball Subs are a delicious twist on the classic meatball sandwich.   • 1 lb lean ground beef
  • 1 lb ground turkey
  • 1 cup plain breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 tsp garlic powder
  • 2 cups marinara sauce (store-bought or homemade)
  • 4 soft sub rolls
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine ground beef, ground turkey, breadcrumbs, Parmesan cheese, eggs, garlic powder, salt, and pepper. Mix gently until combined.
  3. Form mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes until internal temperature reaches 165°F (74°C).
  5. While meatballs bake, heat marinara sauce in a saucepan over medium heat.
  6. Once baked, add meatballs to the warm sauce to coat.
  7. Slice sub rolls open lengthwise, fill with meatballs and sauce, then top with mozzarella cheese.
  8. Serve immediately.
