  • 4 boneless, skinless chicken breasts
  • 1 cup cranberry sauce (homemade or unsweetened store-bought)
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a baking dish with cooking spray.
  2. Season chicken breasts on both sides with salt and pepper.
  3. In a bowl, mix cranberry sauce, honey, soy sauce, minced garlic, and chopped rosemary.
  4. Place seasoned chicken in the baking dish and pour the cranberry mixture over it.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until chicken reaches an internal temperature of 165°F (75°C).
  6. Serve drizzled with the remaining sauce from the baking dish.
