Instructions
- In a large bowl, mix flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough holds together. Form into a disk, wrap in plastic wrap, and chill for at least one hour.
- Preheat your oven to 375°F (190°C).
- Toss halved apricots with ¼ cup sugar and a pinch of salt; set aside.
- Roll out chilled dough on a floured surface to about 12 inches in diameter and place it on a parchment-lined baking sheet.
- Arrange apricots in the center of the dough, leaving 2 inches around the edges free. Fold edges over fruit to create a rustic look.
- Brush crust with milk or egg wash, sprinkle remaining sugar on top, and bake for 35-40 minutes until golden brown.
