  • 34 lbs boneless pork shoulder
  • 2 cups fresh apple cider
  • 2 medium yellow onions, sliced
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme (or 1 tsp dried)
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1/4 cup brown sugar

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Season pork shoulder generously with salt and pepper.
  3. In a large Dutch oven, heat oil over medium-high heat. Sear the pork until golden brown on all sides (about 4-5 minutes per side). Remove from pot.
  4. Sauté onions and garlic in the same pot until fragrant (3-4 minutes).
  5. Pour in apple cider and chicken broth; scrape up any browned bits from the pot. Stir in brown sugar and thyme.
  6. Return the pork to the pot, cover tightly, and braise in the oven for about 3 hours until tender.
