- 2 medium sweet potatoes
- 1 cup crumbled feta cheese

- Salt & pepper to taste
- 1 tbsp Dijon mustard
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and wrap each beet in foil; place on the baking sheet alongside diced sweet potatoes. Drizzle with olive oil, salt, and pepper. Roast for 30-40 minutes until tender.
- In a bowl, mix Greek yogurt, Dijon mustard, lemon juice, salt, and pepper; whisk until smooth.
- Once cooled, chop roasted veggies into bite-sized pieces. Combine in a large bowl with feta cheese and drizzle with yogurt dressing.
