Ingredients

  • 2 medium fresh beets
  • 2 medium sweet potatoes
  • 1 cup crumbled feta cheese
  • ½ cup plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • Salt & pepper to taste
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and wrap each beet in foil; place on the baking sheet alongside diced sweet potatoes. Drizzle with olive oil, salt, and pepper. Roast for 30-40 minutes until tender.
  3. In a bowl, mix Greek yogurt, Dijon mustard, lemon juice, salt, and pepper; whisk until smooth.
  4. Once cooled, chop roasted veggies into bite-sized pieces. Combine in a large bowl with feta cheese and drizzle with yogurt dressing.
  5. Gently toss everything together and serve garnished with more feta or fresh herbs if desired.
