  • 1 can (15 oz) mixed beans (kidney, black, garbanzo)
  • 1 cup fresh cucumber, diced
  • 1 medium red bell pepper, sliced
  • 2 green onions, finely chopped
  • 2 tbsp toasted sesame oil
  • 3 tbsp white miso paste
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup

Instructions

  1. Rinse and drain the canned mixed beans to remove excess sodium.
  2. Dice the cucumber and red bell pepper into bite-sized pieces.
  3. In a small bowl, whisk together miso paste, rice vinegar, honey (or maple syrup), and sesame oil until smooth.
  4. In a large mixing bowl, combine beans, cucumber, bell pepper, and green onions. Pour the dressing over and toss gently until well-coated.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve chilled or at room temperature; garnish with additional green onions or sesame seeds if desired.
