- 1 lb boneless, skinless chicken thighs
- 1 large onion, finely chopped
- 1 thumb-sized piece fresh ginger, grated
- 4 garlic cloves, minced
- 2 medium tomatoes, chopped
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- Salt and pepper to taste
- 2 tbsp oil
Instructions
- 1. Prepare all ingredients: chop onions, mince garlic, grate ginger, and chop tomatoes.
- 2. In a large pot over medium heat, heat oil and sauté onions until golden brown (about 5 minutes).
- 3. Add minced garlic and grated ginger; cook for another minute until fragrant.
- 4. Stir in chopped tomatoes along with salt and pepper; cook down for about 5 minutes.
- 5. Mix in curry powder and then pour in coconut milk, stirring well.
- 6. Add chicken thighs and bring to a simmer; cover and cook for 20-25 minutes until chicken is tender.
